Classic Cretan dakos

Ingredients for 4 Ducks:

4 round barley rusks
1 water glass of olive oil
2-3 tbsp oregano
600 g. grated tomatoes
½ kilo Cretan xinomyzithra
4 tablespoons capers
16 olives
4 mint leaves


Pour the 4 round barley rusks with olive oil. Salt them very gently. Pour the rusks with the grated tomato. Salt again slightly, add a little oregano and some olive oil. Divide the xinomyzithra for the round barley rusks and pour over some olive oil, capers and olives. In the middle of each barley rusk put a mint leaf.
