Ingredients for 4 people
4 round barley rusks PGI
12 plump sardines
1 cup. of tea
chopped basil
4 mature tomatoes
juice of 1 ½ lemon
8 tablespoons olive oil (for dakos)
4 tablespoons olive oil (For sardines)
oregano
Execution
Clean the sardines removing their heads and giblets.Put them in a baking pan and pour 4 tablespoons olive oil, add salt, oregano and bake in the oven for 15 minutes at 180oC. Wet lightly your dako. Pour a tablespoon of olive oil on each. Cut the tomatoes into small cubes and spread it evenly onto the rusks. Place 3 sardines on each of barley rusks. Sprinkle with basil and pour the remaining oil. Pour lemon and serve.
